Daily production against tomorrow's orders, with inputs that go off in days and outputs that go off faster. Flour, butter and yeast move constantly; the standing wholesale order has to be met every morning regardless. Planning is short-horizon and repetitive, which sounds easier than it is. What makes or breaks it

  • Recipe scaling for daily production. You bake the same things in different quantities every day. Scaling should be a number you change, not a spreadsheet you rebuild.
  • Short-horizon planning. Knowing what to pull tomorrow morning matters more than a rolling twelve-week forecast.
  • Waste and yield recorded honestly. Bakeries throw away real money in unsold product. If the system does not capture that, your margins look better on screen than in the bank.
  • Allergen control across shared equipment. Especially where the same mixer handles gluten and gluten-free lines.
