How the work runs

Fermentation is a capacity constraint you cannot rush, and tank availability governs the schedule more than material availability does. A batch occupies a vessel for days or weeks, packaging is a separate step with its own materials, and excise paperwork follows the liquid throughout. Distilleries add aging, which means product sitting in barrels for years while your accountant asks how it is valued.

What makes or breaks it

  • Tank and vessel capacity as a real constraint. Scheduling that ignores whether a fermenter is free is scheduling that does not work here.
  • Multi-stage production with work in progress. Wort, fermentation, conditioning, packaging. Each stage holds value and needs to be visible.
  • Lot traceability through packaging. The batch identity has to survive into cans, bottles and kegs, with date codes that mean something.
  • Excise and duty records. Volumes produced, moved and lost are reportable. Reconstructing them later is painful.

Where people get caught out

Assuming a general manufacturing system understands fermentation. Most model production as an event, not a period. Ask specifically how a batch that occupies a resource for three weeks is represented.
